Wine Tasting Note :

Made in the Jura region, this liquid is on the edge of what we’d consider wine. It is made  primarily from Pinot Noir grapes although other local varietals are often included as well. It is comprised of roughly half unfermented grape juice and half grape distillate. During fermentation, yeast consumes the sugars in grape juice and emits alcohol as a byproduct. Having not undergone fermentation, the grape juice is extremely sweet and acidic. On the other hand, wine from the same grapes which has been distilled will basically be an unaged spirit with high alcohol and little or no sugar. When combined, the alcohol returns to that of a fortified wine with a similar level of sweetness.

In the glass it is transparent right to the core; rose cordial comes to mind. The nose is interesting. It has ruby port notes yet is not as thick and chewy. Berry characteristics shine through with hints of lavender and spice. As an aperitif or digestif, I think Macvin makes a strong case for an occasional replacement for the classics

Jura 產酒區位於法國東面的瑞士邊界及勃艮第中間位置, 是現時法國最細小的AOC法定產區,全區有1850公頃葡萄種植面積.

這個沒太多人認識的偏遠產酒區,所產的酒出色又神秘. 這裡雖然位於偏遠而寧靜的山區,但它那獨特的風土條件,稀有的葡萄品種和特殊的釀
造方法,讓這裡創制了多款不同風格的罕有葡萄酒款。因氣候及泥土特殊,所以有些品種只有在這裡本土才有種植。
例如:Savagnin, Poulsard、Trousseau ,以及兩個常見品種Chardonnay、Pinot Noir 也有種植。

夏天短,秋天冷而下雪的地方,一入九月後,葡萄藤缺乏日照,所以會先把葡萄採下來,放在稻草上,讓葡萄在稻草上熟成。葡萄9-12 月都躺在稻草上,平常100公斤的葡葡可做70公升的酒,這個做法最後只能做成20公升的酒,其他都蒸發了。

Macvin 葡萄及甜酒所選上述的5種葡萄釀成,用三分之一的經葡萄
皮蒸餾而成的烈酒Mace( 葡萄皮白蘭地)混入三分之二的未經發酵葡萄汁液放在木
桶內陳年24個月後便完成,酒精達16-22%,擁有特別的鹹梅菜,橙皮及乾果的豐富香氣。

一種白酒混蒸餾酒的釀酒方式,先將酒放入木桶2年,然後將葡萄渣去掉,再混入蒸餾酒,再度陳桶。酒精濃度18度,開瓶後可放2-3 周。

以貴腐酒的方式釀製, 酒色呈金黃, 酸度強,尾韻再拉回甜味,非常新鮮的烏梅味,其後後甜味才出現,

非常配襯濃味的海鮮, 特別是奄仔蟹, 黃油蟹, 大閘蟹等, 非常絕配,在口腔內跳出了另類的感覺 !
